Have you ever wondered about the intricate art and science behind your daily cup of coffee? Crafting the perfect cup of coffee that delights your taste buds requires a meticulous approach that incorporates cutting-edge technologies, various blending techniques, and a profound comprehension of the coffee-making process. At Fairtrade NAPP, we recognize the importance of empowering our fairtrade producers with the knowledge and skills to master this craft including latest technologies of coffee roasting, coffee grinding techniques, blending of different grades and varieties of coffees and packaging. Hence, 9 participants from 6 small producer organizations gained immersive experience from the 5-day Kaapi Shastra Training program organized by Fairtrade NAPP and conducted by Coffee Board of India, Bengaluru to facilitate producers with implementing various learnings on their respective organizations. This training is being co-funded under Coffee development Plan by Nespresso through Fairtrade Max Havelaar, Switzerland

It was indeed a well-designed comprehensive program that included all the aspects of coffee right from bean to cup. The first day unfolded with a vibrant welcome and an introduction to the changing trends in the Indian Coffee Industry. The participants gained insights into the classification of Indian coffees through practical activities such as visual assessment, roasting, moisture testing, and the art of coffee tasting. It’s not just a course; it’s an initiation into the secrets of crafting the perfect cup. The program offered hands-on experiences with coffee roasting machinery from Buhler Systems and Probat systems. Participants embarked on field visits to roasting units and factories which bridged the gap between knowledge and practical application. Day three explored into the chemistry of coffee roasting, principles of brewing, and espresso techniques, setting the stage for participants to become true maestros in the art of coffee creation.
The final 2 days of Kaapi Shastra brought together the nuances of blending coffees, exploring different methods, and understanding the mechanisms of grinding. Geographical Indication tagged coffees took the center stage in cupping sessions by emphasizing the diversity and richness of coffee varieties. The program concluded with a focus on coffee packaging, consumption trends, roasting industry trends and business opportunities, paving the way for participants to make a mark in the ever-evolving world of coffee. The training concluded with certification distribution to the producers.
“This training was an excellent program as it helped a lot to us as coffee growers. It helped us how quality is impacted by improper method of harvesting. We also came across the grading, roasting and cupping of different grades and verities of coffee. All areas were covered within the limited time by excellent faculties with practical classes. We also had the opportunity to interact with faculties, machine suppliers and also even the packaging suppliers. More than classroom, it was the practical sessions that helped us. As participants reflected on the well-utilized training session, emphasizing the program’s comprehensive nature and hands-on approach, it’s clear that this initiative goes beyond education; it’s a catalyst for empowerment. This program provided the producers with necessary knowledge to improve the quality of coffee beans that in turn will have a greater impact on the cupping score. It also provided participants with the necessary knowledge to establish business and contribute towards their journey as coffee entrepreneurs. As the success of Kaapi Shastra is celebrated, more programs with other batches of producers are being planned in future. Fairtrade NAPP’s commitment to enhancing skills and fostering sustainable practices in the coffee industry resonated with the shared aspiration of coffee producers.
